This dip is one of Tyler's favorites! It's cheesy and creamy and totally addicting! Whenever we're having a party or if I need to take an appetizer to something, this is always my go-to. It is so incredibly easy and fast to make. Make it in the morning or the day before your get-together and it will be good to go!
Cheesy Corn Dip
INGREDIENTS:
- 11 oz can southwest corn, drained
4 oz can chopped mild green chilies, undrained
1/4 cup finely diced onion
1/2 cup sour cream
1/2 cup mayonnaise
2 Tablespoons salsa
1 Tablespoon ground cumin
3 cups Mexiblend shredded cheese (I like the fine shred)
finely chopped red pepper for garnish- optional
assorted crackers (I like Wheat Thins)
DIRECTIONS:
1. In a bowl, combine southwest corn, green chilies, diced onion, sour cream, mayonnaise, salsa, and cumin. Mix until completely combined.
2. Stir in cheese. Transfer dip to serving dish.
3. Garnish with red peppers. Cover and refrigerate for a few hours before serving.
